Papas Scrumptious Stew with Rosemary Dumplings

This is a superb stew to make.My personal favourite choice of meat for a stew is lamb.The rosemary dumplings compliment this stew and kids love them.

What you will need

1/4 cup Oil
1 large onion (chopped)
50grams Papa's All in one stew mix
1  1/2 to 2kg beef or lamb
1 to 2 medium carrots (cut into chunks)
2-3 medium potatoes (quartered)
1 large ripe tomato (skinned and chopped ) or 1/2  410gram tin chopped tomatoes
1 cup Water
Salt to taste

How to do it

Brown meat in small batches in a large pot. Set aside.Saute onion in hot oil until soft. Reduce heat to low, add meat and juice from meat. Add  50grams Papa's Stew Mix and 1 and a half  cups of water and stir well.Cover and simmer,allowing natural juices from meat to release. Stir occasionally. As mixture thickens it might be necessary to add more water. (Don't add too much water as stew will thin too much).Continue to simmer,checking consistency, until meat is almost tender.
Add potatoes,chopped tomato and carrot. Simmer until cooked. (Add dumplings to stew about 10 minutes after adding the potatoes)

Serve with rice, mashed potato or a chunky bread. (Or just the dumplings)

Rosemary Dumplings - (Easy to prepare and a delicious addition to the stew)

1 Cup self-raising flour
20grams butter
1 teaspoon dried rosemary
1/3 cup milk
Sift flour,add butter. Using fingertips, rub butter into the flour until the mixture becomes fine and crumbly. Add rosemary and mix in. Add most of the milk and mix to a soft dough with a knife. Add more milk if necessary. Place dough on a lightly floured surface. Knead the dough gently for about a minute or until smooth. Divide the dough into 8 portions and roll into balls. Place dumplings on top of stew mixture. Cover and cook for about 15 minutess.
